Fried Alligator Bites

Trim the alligator meat and cut into bite-sized pieces.

Place the meat in a container and cover with milk or buttermilk. Add the eggs (1 egg per 2 lbs of meat), Cajun seasoning, and hot sauce. Stir to coat. Cover and marinate in the refrigerator, ideally overnight.

When ready to cook, preheat the oil in a deep fryer or heavy pot to 350°F. In a shallow dish or batter shaker, combine self-rising flour with additional Cajun seasoning. Remove the alligator pieces from the marinade and dredge in the seasoned flour until fully coated.

Fry the alligator in batches, being careful not to overcrowd the oil. Stir or shake the basket occasionally to prevent sticking. Cook until golden brown and the internal temperature reaches 165°F.

Place on wire rack or paper towels, serve hot, and enjoy!

Milk or buttermilk (enough to cover the meat)

Eggs (1 egg per 2 lbs of alligator meat)

Cajun seasoning (such as Tony Chachere’s) to taste

Hot sauce to taste

Self-rising flour

Oil for frying
